Hellmann’s “Stuffing” crusted Turkey Cutlets (and GIVEAWAY!!)


I grew up on mayonnaise. Not Miracle Whip….ewww.


I know, I know, it’s totally a preference thing and depends on what you grew up with. My husband grew up with Miracle Whip and I grew up with mayo. We still get along though.


But when I was growing up, my mother was raising 7 kids. She pinched her pennies, used coupons, shopped sales, and found deals the best she could. But there was one thing she never skimped on, and that was on mayonnaise. She always bought Hellmann’s® brand mayo because she insisted the taste was superior. No one ever dared slip some store brand mayo in her potato salad. No, never.


(And in case you’re confused……Hellmann’s mayo is the same as Best Foods mayo

 It just depends on which side of the Mississippi you live on.  Same company, same great taste.)


And now that I’m grown, raising my own family………I’d rather save money on toilet paper than on mayonnaise. And umm, I’m not kidding. :) For our household, it’s Hellmann’s® all the way. So when asked to try out a Hellmann’s® recipe for this upcoming holiday season, I jumped all over it. For me, it was easy. And I like to find new ways to use my favorite mayonnaise brand. Yum.


Bobby Flay has actually teamed up with Hellmann’s to come up with some delicious recipes that are quick and easy……..and to use up leftover turkey from the upcoming holiday season. Check, check, and check. I like fast and easy. And come on, Bobby Flay isn’t going to come up with tasteless recipes. He’s an Iron Chef!


And if you’re not sure you want to cook a whole bird this Thanksgiving or want an additional turkey option on your Thanksgiving menu…….you have got to try this.


All I have to say is juicy, crispy, and delicious.




Can’t you just see a platter of these on your Thanksgiving dining room table?


The crust was only on one side and was so crispy and flavorful, while the turkey was so juicy and tender. There was something about the mayonnaise mixture fused with the fresh parsley, poultry seasonings and breaded crust that totally surprised my taste buds. It had a nice familiar “thanksgiving turkey” flavor to it as well. But I guess I’d have to admit that my thanksgiving turkey has never tasted this juicy. (Oooh, I’m suddenly starving just typing this up!)



And because it was so quick, I’m going to have to make this up all year long.

I don’t have to wait until a holiday to have the time to make some incredibly tasty and moist turkey. Yum.

Here are the only ingredients:



And because I can’t eat regular bread crumbs, I had to make my own. I toasted about 8 slices of gluten free bread (Udi’s brand) in the oven for a few minutes. When the bread was toasted and dried out, I broke it up and threw it into the food processor. The results were perfect.



First, blending your mixtures:

1. Combine 2 cups of your plain bread crumbs, 3 tablespoons of chopped flat leaf parsley, and some salt and pepper to taste.

2. Then combine 1/4 cup of Hellmann’s® (or Best Foods®) mayo, 2 tablespoons of dijon mustard, and 1 tsp. poultry seasoning.

3. Blend ingredients well in their separate bowls.



Next, dipping your turkey cutlets:

1. Brush one side of each turkey cutlet with a generous portion of the mayo mixture.

2. Place the mayo side down into the bowl of bread crumbs. Press down gently with fingers to be certain the crumbs are adhering on the other side.

3. Place the turkey with the breaded side up on a plate, while you coat your other turkey cutlets on one side.

4. Heat 2 tablespoons of canola oil in a non-stick skillet (which I didn’t use but would have helped) over medium heat. (the directions said medium-high but that was too high on my stove.) Place 2 of your cutlets with the breaded side down and cook for 3 minutes. Then flip over and cook another 2 minutes on the non-breaded side.



Remove and serve.

“Stuffing” Crusted Turkey Cutlets

a Bobby Flay recipe

4 servings

prep time: 15 minutes cook time: 10 minutes


2 cups panko or plain dried bread crumbs

3 Tbsp. finely chopped fresh flat-leaf parsley

Salt and freshly ground black pepper

1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise

2 Tbsp. Dijon mustard

1 tsp. poultry seasoning

4 turkey cutlets (about 1/2 inch thick)

4 Tbsp. canola oil, divided


  1. Combine bread crumbs, parsley, salt and pepper in large shallow dish; set aside.
  2. Combine Hellmann’s® or Best Foods® Real Mayonnaise, mustard and poultry seasoning with wire whisk in small bowl and season, if desired, with salt and pepper.
  3. Season turkey, if desired, with salt and pepper. Brush 1 side of each turkey cutlet with mayonnaise mixture, then coat in bread crumbs.

Heat 2 tablespoons oil in 12-inch nonstick skillet over medium- high heat and cook 2 turkey cutlets, bread side down, 3 minutes or until golden brown and a crust has formed. Turn over and cook an additional 2 minutes or until turkey is thoroughly cooked. Repeat with remaining oil and turkey.
